One shop, one long cutting block and the same idea the whole time: animals from farms we can drive to, cut by people who remember how you like your chops.

A corner shop,
with a bigger cooler.

We added a delivery van, a sausage room and a dry-aging cabinet over the years. The cutting block, the phone number and the habit of asking what you are cooking have not changed.

2013

The doors open

Nora opens a narrow shop at 2217 N Farwell Ave with one walk-in cooler, one band saw and a half hog a week.

2015

Four farms, all whole

Kettle Ridge, Oak Hollow, Cedar Run and Prairie Lane start sending whole animals every week.

2017

Our own delivery

A small refrigerated van and a promise: cold delivery anywhere on the East Side and in Riverwest.

2019

The dry-aging cabinet

The old storage room becomes a dry-aging cabinet, and the 28-day ribeye becomes the case favorite.

2021

Monthly meat shares

Tess starts meat shares for households, with about 10 pounds of mixed cuts every month.

2026

Eight neighborhoods

Cold delivery now reaches Walker’s Point, Bay View, Shorewood and Whitefish Bay.

Nora trained at a whole-animal shop in Chicago and opened her own in 2013. She still breaks down every steer that comes in and writes the cook times on the paper when the day gets busy.

Rhett runs every freezer order and Saturday class. Customers ask for him because he can tell you in one look how many chops a half hog will give you.

Tess makes the house sausage every Tuesday, plans the delivery routes and looks after every meat share. If a box needs to reach a restaurant by 3 PM, she makes it happen.
